a recipe post!

Tonight I made Banana Nut Bread. I don't actually like bananas, but had some in the freezer that needed to be used, so Banana Nut Bread it was! While I'm still not a huge fan of the stuff, this is a really good recipe and I enjoyed the nibble I tried earlier this evening. Here is the recipe for your culinary enjoyment.


Ingredients:

2 Cups All Purpose Flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp ground cinnamon
1/8 tsp ground nutmeg
2 beaten eggs
1 1/2 cups mashed banana
1 cup sugar
1/2 cup cooking oil or melted butter (I used butter)
1/4 cup chopped walnuts

Directions:

1. Grease bottom and sides of 9X5x3 inch or two 7.5X3.5X2 inch loaf pans. Set aside. Combine flour, baking powder, baking soda, cinnamon, nutmeg, and 1/4tsp salt. Make a well in the center of the flour mixture; set aside. (you make a well by using a wooden spoon - or your fingers - to push the flour mix around the sides of the bowl. This leaves a hole in the middle)

2. In a medium bowl, combine eggs, bananas (the food processor is great for mashing btw), sugar, and oil (or butter). Add mix all at once to the flour mix. Stir until moistened. Batter will be lumpy - this is OK! Fold in nuts. Spoon into greased pans.

3. Bake in 350 degree oven for 55 - 60 minutes for 9X5X3 in pan, or 40-45 minutes for two of the smaller pan, or until a wooden tooth pick comes out clean when inserted in the center. If necessary cover with foil the last 15 minutes to avoid overbrowning (I missed this tidbit of info, so mine is a bit brown. Not too brown, I don't think, but browner than maybe it should be)
Cool in pan on wire wrack for 10 minutes, then remove from pan and cool on wire wrack until completely cool. Wrap and store overnight before slicing.

You can top it with this....sprinkle on top of the bread before you make it.

Streusel Nut Topping:

Combine 1/4 cup packed brown sugar and 3 TBSP all purpose flour. Using a pastry blender, cut 2TBSP of butter into it until mixture resembles course crumbs. Stir in 1/3 cup chopped walnuts. sprinkle over bread BEFORE you bake it.

A note on the topping...

I do not have a pastry blender - I actually have no earthly clue what it is lol. So I sliced my butter up and threw the sugar, flour, butter into my food processor until it looked like course crumbs. Then stirred in the walnuts by hand and that was that.

P.S. Must give the proper credit here! This recipe is straight out of the Better Homes and Garden New Cookbook, Bridal Edition. Page 119 :) Got the cookbook as a wedding gift and use it all of the time! I would highly recommend it -I've made tons of stuff from it and it's all been delicious!
